Unlike an electric cooktop, which heats a coil, then the glass top, and then the pan, the coils under an induction surface produce a rapidly alternating current, which in turn creates a dynamic electromagnetic field. When a ferrous pot or pan is set on the surface, the field creates nearly instantaneous heat, which is conducted through the cookware and to the food within.

HOW DOES IT WORK?

In induction cooking, electricity flows via a coil that generates a magnetic field under the ceramic glass surface. Once an induction-compatible pan is placed on the cooktop, currents instantaneously generate heat within it. Because the heat is distributed to the cookware rather than the surrounding surface, induction cooktops work faster and more efficiently as they send more of the heat to the right place.

WHAT COOKWARE CAN I USE?

For pots and pans to be induction-compatible they must be made of a magnetic material that is either iron or iron-based, such as steel. So if your cookware is made of stainless steel over aluminum, cast iron, or enamel on metal, it will work on an induction surface. Some cookware has a coil symbol on the base to indicate compatibility, but it’s easy to test by holding a magnet to the bottom of the surface. If it sticks firmly, it is induction friendly.

HOW DO I PROTECT MY INDUCTION COOKTOP FROM SCRATCHES?

Although the ceramic glass surface is very durable and scratch-resistant, it’s a good idea to get in the habit of lifting pots and pans rather than dragging them across the cooktop.

IS INDUCTION SAFE?

Induction heating has no open flame or exposed heating element that could accidentally catch things on fire. If you turn on an induction burner with no pot on it, it will not get hot. The instant you remove your pot from the induction surface, the heating stops. The surrounding cooktop stays relatively cool. Wolf Induction Cooktops can power off with one tap for added safety.

ARE INDUCTION COOKTOPS EASY TO CARE FOR?

Yes, very. Because the cookware is the primary source of heat transfer, spills don't get baked onto the cooktop—they wipe off easily with a soft cloth or non-abrasive sponge. Specialized cookware cleaners also help leave them looking shiny and new.
