Ingredients
INGREDIENTS
–1/2 cup lime juice, freshly squeezed–1/2 cup extra virgin olive oil
–4 cloves of garlic, peeled and minced
–2 tablespoons fresh oregano leaves, chopped
–1 teaspoon ground cumin
–1 teaspoon kosher salt
– 3 1 1/4 lb Cornish hens
–1/2 yellow onion, thinly sliced
–1/2 teaspoon freshly ground black pepper
Preparation Method
- Prepare the marinade by whisking together the lime juice, olive oil, garlic, oregano, cumin, and salt in a small bowl.
- Pour the marinade into a 1 gallon resealable ziptop bag.
- Place the hens in the bag and press to remove as much air as possible before sealing.
- Place the bag in a large bowl or rigid container and into the refrigerator. Allow to marinade at least 4 hours or preferably overnight.
- Place the sliced onions, the hens, and their marinade in a small roasting pan or casserole dish. Season the hens with freshly ground black pepper.
- Place the dish into the oven on the lower rack.
- Select the Micro Roast Mode set to 425°F and roast for 45 minutes or until an internal temperature of 165°F is reached in the thickest part of the breast.
