Preparation Method
- Position oven rack to Rack 3.
- Preheat Wolf oven in CONVECTION ROAST at 400°F.
- Season interior and exterior of fish with salt and pepper.
- Fill each fish with lemon, mandarin slices and thyme.
- Tie each fish with kitchen twine. Drizzle with oil.
- Place in foil lined broiler pan or cast iron pan.
- Roast for 25 minutes or until an internal temperature of 155°F.
- Remove from oven and serve immediately.
