Grilled Chicken Kabobs

Chicken Breasts, 2 lbs, cut into 1/2" cubes6 cherry tomatoes
6 mushrooms
1 red bell pepper, cut into 1/2" cubes
1 green bell pepper, cut into 1/2" cubes
1 red onion, cut into 1/2" cubes
1 tablespoon olive oil
1/2 bunch parsley, chopped
1/2 lemon
6 wooden skewers
Salt and pepper, to taste
Preparation Method
- Preheat Wolf outdoor grill on medium high heat for 10 minutes.
- One day prior soak the wooden skewers in water to keep them from burning on the grill.
- In a medium bowl combine the chicken, parsley, oil and season with salt and pepper.
- To make the brochettes, alternate the chicken, peppers and onions on a wooden skewers. Top the skewers with a tomato and a mushroom. Continue the process to make 6 brochettes.
- Place the brochettes onto the grill grates and let cook for 3 minutes on each side, while closing the door in between turns.
- Remove from the grill and place onto serving platter. Squeeze the lemon juice over the brochettes and serve.
